For years now, my beverage of choice has been a mocha drink made with hot milk—rather than the more usual coffee or tea.  I used to use General Foods (later Maxwell House) International Coffee Swiss Mocha.  However, as of the end of 2009, it has no longer been possible to buy it.  That meant coming up with a home-made substitute.   Obviously, this isn't quite the same. But it is very close.



Ingredients


Mocha Mix:

1 cup powdered skim milk
1/2 cup Splenda
1/2 cup freeze-dried instant coffee
1/3 cup cocoa powder


Per Drink:

1 mug skim milk
1 tsp mocha mix (extra heaping)





Directions


Preparing the Mocha Mix
Place the dry ingredients in a food processor.  Blend on high speed until all the ingredients have been smoothly mixed together.  This will also break up the small chunks of freeze-dried coffee and clumps of cocoa, ensuring that the mixture will not separate.
        Store the mixture in a closed jar.  If the size of this allows, repeat the process with additional batches of ingredients to fill the jar.  (It will be far less frustrating in the long run.  If you drink as much mocha as I do, you run out fast.)

Making a Mug of Mocha

  Measure the amount of milk needed by filling the mug you are going to use.  Then pour the milk into a saucepan.  Heat on the stove until the milk is steaming hot, and just about to come to the boil.

  Into the mug, put an extra-heaping teaspoon of the mocha mix (or to taste).

  Fill the mug about half full of hot milk.  Stir well to ensure that the mocha mix has all dissolved.

  Pour the rest of the hot milk into the mug.


NOTE:   If you wish to make up the mocha drink with hot water instead of hot milk, you will need to add more of the powdered milk to the mocha mix.  If the taste of the drink is otherwise acceptable, then keep the proportions of the other ingredients the same:  simply increase the amount of powdered milk until you get the right degree of milkiness.
       Of course, the proportions of coffee to cocoa can also be altered if desired.
